Recipe: chicken breast with broccoliChicken is very important for me, when it comes down to food: it’s delicious, has low fat and calories and abounds in proteins. Combined with rice and broccoli it has a lot of carbohydrates and cendrée. The cashews add the special note to the meal. The recipe is especially used in times of regeneration.
Ingredients:
(four persons)
250 g or 2 bags of natural rice
2 onions, a bit of margarine to sauté
500g chicken or turkey breast
500-700 g Broccoli
500 g Champignon
1/4 litre vegetable stock
100 g cashews
150 g sour cream
One scoop lemon juice, salt and pepper
Preparation of food:
Let expand the rice in parboiling, salted water. Pare and chop the onion and sauté them with a bit of margarine. Take the chicken breast and cut them into one cm thick slices and sauté them with the onions. Then take them out of the pan. Wash the broccoli and champignon, cut them into pieces and steam them with the vegetable stock until they are done. After that thicken them with the sour cream and season the vegetables with pepper, salt and lemon juice. Constantly stir and simmer everything for 2-3 minutes until the sauce is thick. Sauté the cashews without oil in the pan and add them to the vegetables.
